Ingredients

  • 1 1/2 cups cannellini or pinto beans, soaked
  • 3 tablespoons olive oil
  • 3/4 pound smoked ham, chopped
  • 1 large onion, diced
  • 2 medium stalks celery, diced
  • 3 cloves garlic pressed
  • 4 cups low sodium chicken broth
  • 4 1/2 cups water
  • 1/3 cup tomato paste
  • 1 1/2 cups Elbow macaroni cooked
  • Grated Parmesan cheese (optional)

Preparation

Step 1

Soak beans overnight. Drain and place in slow cooker. Place ham in slow cooker. In a large skillet sauté onion, celery and garlic in oil until onions are translucent. Add chicken broth and whisk to scrape up the browned bits from the bottom of the pan, and then add to slow cooker. Add water and tomato paste to slow cooker. Cover and cook on low heat setting for about 8 hours, or until beans are tender. About 30 minutes before you are ready to serve, cook macaroni noodles. Drain and add to soup. Sprinkle with grated Parmesan cheese, if desired, and serve.

SERVING SUGGESTION: Serve with a big Romaine salad with thinly sliced red onion, grape or cherry tomatoes,
crumbled Feta cheese and a vinaigrette dressing.
