Bacon Gorgonzola Chicken Salad

Ingredients

  • 3 cups cooked shredded chicken breast
  • 8 strips cooked crumbled bacon
  • 1/4 cup crumbled gorgonzola cheese
  • 3/4 cup finely chopped celery
  • 1/2 cup mayonnaise
  • 1/2 cup prepared blue cheese dressing
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon fresh thyme leaves, finely chopped
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon garlic salt

Preparation

Step 1

You can either use a rotisserie chicken and shred it or bake your own and shred it. 

To cook your own:
Place 2 chicken breasts into a baking pan with 1/4 cup chicken broth. Cover lightly with foil and bake for 50-60 minutes until cooked through.  Let rest for 15 minutes before shredding.

Finely chop 2 small stalks of celery.  Add bacon slices, Gorgonzola, mayonnaise and blue cheese dressing. 

Place all ingredients into a large bowl. Stir to combine. Taste and season with additional seasonings if needed.
