Potato Pancake

  • 3-4 large potatoes, peeled and diced
  • 1 large onion
  • 2 eggs
  • 4 T Flour
  • 1 t baking powder
  • 1 t salt
  • vegetable oil
  • apple sauce or sour cream



Step 1

Place onion, eggs, flour, baking powder, salt and 1/2 c of diced potatoes in a blender jar grate, using 5 second bursts; not too watery. Add remaining potatoes a third at a time and chop, also in short bursts. Should be like hand grating not too fine.

In pan add oil about 1/2" at 425 degrees until oil is bubbling. Pour batter onto hot skillet using a laddel and cook the pancakes until brown. Drain on paper towel.
