Pork-Apricot Glazed Pork Tenderloin

Ingredients
- 2 pork tenderloins about 12 oz each
- 1 TBSP olive oil
- coarse salt
- 1 10-12oz jar apricot jam
- 1/4 c spicy brown mustard

Preparation
Step 1
Heat oven to 325.
Rub pork with olive oil and season with salt. Cook for 15 minutes.
In small saucepan whisk together jam and mustard. Cook until jam melts, about 3-4 minutes. Remove from heat and pour half into bowl for brushing.
Remove pork from oven and bast with glaze. Continue cooking until pork temp reaches 150.
Remove from oven and tent with foil. Let pork rest for 5-10 minutes and then slice. Serve with remaining sauce.
