Ingredients

  • Barbecue Sauce:
  • 1 (3 1/2 to 4-pound) beef brisket
  • 1/4 cup plus 2 T liquid smoke
  • 1 t salt
  • 1 T onion powder
  • 1 T garlic powder
  • 1 cup catsup
  • 1/2 cup water
  • 2 T butter
  • 2 1/2 T brown sugar
  • 2 1/2 t dry mustard
  • 3/4 t celery salt
  • 3 T Worcestershire sauce

Preparation

Step 1

Line a 13 x 9 x 2-inch baking pan with a 36-inch piece of heavy-duty aluminum foil, leaving a 9-inch overhang at short ends.

Trim excess fat from brisket. Place in prepared pan; sprinkle with liquid smoke and salt. Bring long sides of foil together, and fold down. Fold up short ends; crimp to seal. Child 8 hours.

Unwrap brisket, and sprinkle with onion powder and garlic powder. Rewrap brisket, and bake at 300 degrees for 4 hours. Remove from pan, discarding juices; thinly slice brisket, and serve with Barbecue Sauce.

Barbecue Sauce directions:
Combine all ingredients in a sauce-pan. Bring mixture to a boil; reduce heat, and simmer 15 minutes.
Yield: 1 1/2 cups
