Made by combining some recipe ideas from a Bisquick cookbook and my chicken.

Ingredients

  • 1-2 lbs boneless chicken breast
  • 1 onion, chopped or sliced
  • 1 cup frozen corn
  • 2 cups shredded cheddar cheese
  • dry ranch dressing mix
  • 1/3 cup mayonnaise
  • 2 T Bisquick
  • 3 cups Bisquick
  • 2/3 cups very hot water
  • cooking oil (vegetable, olive, canola...)

Preparation

Step 1

Preheat oven to 450.
Heat oil in a frying pan or wok.
Cut chicken into bite sized pieces and cook in the oil.
As it is cooking, sprinkle liberally with dry ranch dressing mix.
When cooked through, remove from pan.
Add onions and corn to the pan and cook until onion is translucent.

In a small bowl, mix mayo, 2 T Bisquick and a healthy sprinkling of dry ranch dressing.

In a medium bowl, mix 3 cups Bisquick and hot water. Beat about 20+ strokes until a soft dough forms.

Grease a cookie sheet that has sides to it. Press the dough into the cookie sheet and up the sides.

Spread the mayo mixture on the dough.
Sprinkle with 1/2 of the cheese.
Spread the onions and corn on top.
Add the chicken as the next layer.
Finish with the rest of the cheese.

Bake for 12-15 minutes. Cheese should be melted and crust golden brown.
