Hot Milk Sponge Cake

Ingredients

  • 4 eggs (beaten)
  • 1 3/4 cup sugar
  • 2 cups whole wheat flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup hot milk
  • 2 tbsp butter
  • 1 tsp vanilla
  • Topping
  • 1 cup sugar
  • 1 cup coconut
  • 6 tbsp butter
  • 4 tbsp cream or evaporated milk
  • Icing
  • 8 oz. cream cheese
  • 1/4 cup butter
  • 1 lb. powdered sugar
  • 1 tsp vanilla

Preparation

Step 1

Beat eggs, slowly add the sugar and continue to beat.
Sift flour with powder and salt, stir into egg mixture.

Melt butter in milk and add this all at once. add vanilla and stir quickly with a spoon

Bake @ 350*
30 minutes

Mix topping ingredients together while cake is baking.

Remove from oven and cover with topping. Return to oven and brown slightly.

Let cool and frost with icing
