Cowboy Beans

This recipe cooks the dry beans along with the ham hocks and beer which flavors the beans. This recipe could easily be adapted to a crock pot/slow cooker.

Ingredients

  • 1 lb dry pinto beans
  • 1 12-oz can of beer
  • 1 lb smoked ham hocks
  • 1/2 C chopped onion
  • 1 16-oz can tomatoes, cut up/diced
  • 3 TBS molasses
  • 1 tsp dry mustard
  • 1/4 tsp pepper

Preparation

Step 1

Rinse beans. Combine beans and 7 cups water. Bring to boiling. Simmer 2 minutes; remove from heat. Cover; let stand 1 hour. Drain.
Combine beans, beer and 2 cps water. Add ham hocks and onion; cover and simmer 1 hour, stirring occasionally. Remove met from bones; chop. Discard bones. Return meat to beans along with tomatoes, molasses, dry mustard and pepper. Cover and simmer 1 hour more or until beans are tender, stirring occasionally. Add water or beer, if necessary.
