Ingredients
- 1 head Cauliflower (Cut into Florets)
- 3 Scallions (Sliced)
- 3 tablespoons Parsley (Roughly Chopped)
- 1 clove Garlic
- 2 teaspoons Soy Sauce
- 1 pound Ground Chicken
- Salt and Freshly Ground Black Pepper
- Vegetable Oil (For Frying)
- Marinara Sauce (For Dipping)
Preparation
Step 1
In a food processor, combine cauliflower, scallions, parsley, garlic and soy sauce and puree until a chunky paste forms. Add in the ground chicken, salt and pepper and pulse until the mixture has evenly combined.
Heat a tablespoon of vegetable oil in a medium sauté pan over medium high heat. Using a small cookie scoop or rounded tablespoon, scoop the meatballs into the pan being sure not to crowd the pan. Cook on each side for 4-5 minutes.
Serve with marinara sauce or your favorite dip.
