Ingredients

  • 2 c cold rice at least 1 day old
  • 1/2 onion finely diced
  • 1 small bunch of green onion sliced thinly
  • 4 large eggs
  • 2 T freshly grated ginger
  • 2 T finely chopped garlic
  • 3-4 c of your protein of choice ie: chicken, pork, shrimp
  • 1 small bag of frozen mixed vegetables
  • peanut oil as needed
  • soy sauce as needed

Preparation

Step 1

. Scramble egg in a hot skillet with a little peanut oil and set aside

. Saute meat, onion, vegetables with some of the ginger and garlic and set aside

. heat the pan until it is very hot add a little oil, add in the rest of the ginger and garlic saute quickly , add in rice and stir fry quickly, do no burn the garlic

. Combine all the ingredients and stir fry together add soy sauce to color rice, taste and adjust seasoning with salt and pepper.

. Garnish with the green onion
