Mango Salsa

Yummy on fish/chicken or pork. Great whether you bake or bbq meat.

Ingredients

  • 1 Ripe Mango
  • 1 Red Pepper (seeded & chopped)
  • 2 Plum Tomatoes (seeded)
  • 1/2 C Crushed Pineapple (drained)
  • 1/2 C Orange Juice (with pulp)
  • 1 TBLS Fresh Lime Zest
  • Juice of 2 Fresh Lime
  • 1 TBLS Tequila
  • 1 Serrano Pepper (seeded & finely diced)

Preparation

Step 1

Peel and seed Mango. Dice into bite size chunks. Combine all ingredients and serve with Baked or BBQ chicken/fish or pork.
