Ingredients
- 1 c flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2 eggs
- 8 oz sour cream
- 5 TBSP butter
- 1 c light brown sugar
- 1 c old-fashioned oats
- 1 c blueberries (if frozen, do not thaw)
- 1 TBSP sugar
Preparation
Step 1
Heat oven to 375. Line muffin tin with muffin papers, recipe will not work without them!
In small bowl, combine flour, baking powder, baking soda, and salt. Set aside.
In large bowl, beat eggs and sour cream until thoroughly combined.
In med saucepan, over med heat, melt butter and brown sugar, about 3 minutes. Cool slightly, about 5 minutes, stirring frequently. Beat this into egg mixture. Stir in oats.
Fold in flour mixture and then, very gently, fold in berries.
Fill muffin cups 3/4 full, sprinkle a pinch of sugar on top of each muffin.
Bale 25-28 minutes, cool for 5 minutes and remove muffins from tin and place on cooling rack.
