Ingredients
- One head of cabbage
- One pound of ground turkey (one pound makes 6-8 rolls)
- Cumin
- Cilantro
- Chili powder
- Red pepper flakes
- One can of diced tomatoes in sauce
- One can of mild rotel with green peppers
Preparation
Step 1
Place whole cabbage head in boiling pot of water with dash of salt. Blanch for 4 min (leaves should soften).
Brown turkey with cumin,cilantro,chili powder, and red pepper flakes to taste. Set aside.
Simmer diced tomatoes and rotel in saucepan.
Remove a leaf from cabbage once cooled and place meat inside and roll like a burrito tucking in the sides. Secure with a toothpick if needed. Repeat until all meat is used.
Take remaining cabbage (and scraps ) and chop up. Place at the bottom of a deep pot. Place the rolls on top of cabbage pieces. Pour tomato mixture on top of rolls. Cover pot (leaving slightly open for steam to escape) and simmer for 1 1/2 to 2 hours.
