PICKLED MOSTOCOLLI SALAD
- 1 pd. mostocolli cooked per pkg directions adding a few drops of yellow food coloring to boiling water.
- 1 tsp salt
- 1 tsp garlic powder
- 2 tsp yellow mustard
- 1/2 tsp pepper
- 2 Tlb parsley
- 1 1/2 cups suger
- 2 cups vinegar
- 1 medium cucumber (peeled and thinly sliced)
- 1 red onion (chopped)
- 1 green pepper (chopped)
Boil pasta with food coloring. Drain and cool.
In a blender or shaker add salt, garlic, mustard, pepper, parsley, sugar and vinegar. Blend or shake well.
Add cucumber, onion and green pepper to pasta. Cover with blended mixture.
Stir well.Rrefrigerate until serving.
