Ingredients
- 2 chickens
- 3 LBS jack cheese
- 2 pkgs corn tortillas
- 2 cans chopped olives
- 4 cans las palmas enchilada sauce
- 2 cans herdez sauce
- new mexico chili powder
- 1 whole garlic bulb + 3 cloves
- 1 onion
- dried chili peppers
- sour cream
Preparation
Step 1
bake 2 chickens in a little bit of water
paprika, chili powder, S & P
cool & strip
saute whole head of garlic (+ 3 cloves
pressed garlic) + 1 chopped onion
add 5 cans sauce (2 herdes) + extra
pinches of everything + oregano
cook over low heat
grate 3 LBS jack cheese
line up everything
take tortillas - dip each one in 1 can
enchilada sauce
Fill with:
chicken
cheese
olives
spoonfull of cooked sauce
roll - place in pyrex dish - seam side
down
cover w/ remaining cheese & sauce
cook 350 - 1/2 hr
serve w/ sour cream
