CHICKEN ENCHILADAS

Ingredients

  • 2 chickens
  • 3 LBS jack cheese
  • 2 pkgs corn tortillas
  • 2 cans chopped olives
  • 4 cans las palmas enchilada sauce
  • 2 cans herdez sauce
  • new mexico chili powder
  • 1 whole garlic bulb + 3 cloves
  • 1 onion
  • dried chili peppers
  • sour cream

Preparation

Step 1

bake 2 chickens in a little bit of water
paprika, chili powder, S & P
cool & strip

saute whole head of garlic (+ 3 cloves
pressed garlic) + 1 chopped onion

add 5 cans sauce (2 herdes) + extra
pinches of everything + oregano
cook over low heat

grate 3 LBS jack cheese
line up everything

take tortillas - dip each one in 1 can
enchilada sauce
Fill with:
chicken
cheese
olives
spoonfull of cooked sauce

roll - place in pyrex dish - seam side
down
cover w/ remaining cheese & sauce
cook 350 - 1/2 hr
serve w/ sour cream
