Italian Sausage Supper

Good winter time, crowd pleaser. Can substitute pasta for rice. My family prefers meal with pasta.

Ingredients

  • 1 lb Spicy Italian Sausage (casings removed)
  • 1 C Brown Onion (chopped)
  • 3 med Zucchini (sliced)
  • 2/3 C Tomato Paste
  • 1 C Water
  • 1 tsp Basil Leaves (dried, crushed)
  • Salt to taste
  • 3 C Rice or Pasta (cooked)
  • 1 C Mozzarella Cheese (shredded)
  • 1/4 C Romano Cheese (grated)

Preparation

Step 1

Preheat oven to 350 degrees.
In large skillet, over med-high heat brown sausage with onion. Make sure you stir the sausage to break it up, Drain, reserving 1 TBLS of drippings. Spoon sausage mixture into greased 2-quart casserole dish. Add zucchini to skillet, saute until tender. In med bowl combine tomato paste, water, basil and salt. Stir in cooked rice or pasta. Spoon over sausage mixture. Arrange zucchini slices on top; sprinkle with cheeses. Cover and bake for 20 minutes.
