Ingredients
- 2 C shredded skinless, boneless
- rotisserie chicken breast
- 1/2 C chopped green onions
- 1/2 C (2-oz) shredded monterey jack
- cheese w/ jalapeno peppers, divided
- 2 TBL grated parmesan cheese
- 1 tsp chili powder
- 1/4 tsp salt
- 1/4 tsp black pepper
- 3/4 C low-fat milk
- 1/4 C chopped fresh cilantro
- 1 (11-oz) can tomatillos, drained
- 1 (4.5-oz) can chopped green chilies
- drained
- 12 (6") corn tortillas
- cooking spray
Preparation
Step 1
preheat oven to 375
combine chicken, green onions, 1/4 C jack
cheese, parmesan, chili powder,
S & P in med bowl
place milk & next 3 ingred (through
chilies) in food processor or blender
process until smooth
heat tortillas
pour 1/3 C tomatillo mix into bottom of
11x7" baking dish coated w/ cooking
spray
arrange 4 corn tortillas in dish
top w/ 1/2 chicken mixture
ending w/ tortillas
pour remaining 1 1/2 C tomatillo mixture
over tortillas
sprinkle w/ remaining 1/4 C jack cheese
bake @375 for 20 min or until bubbly
