Ingredients
- 1/4 C olive oil
- 2 TBL red wine vinegar
- 1 TBL dijon mustard
- 1 tsp anchovy paste
- 2 lg. cloves garlic, smashed
- S & P
- 3 lg. boneless chicken breast halves,
- cut into 1" pieces
- 3 TBL grated parmesan cheese
Preparation
Step 1
in med bowl, whisk tog. olive oil,
vinegar, mustard, anchovy paste,
garlic, 1/3 tsp each S & P
add chicken & toss to coat
refrig 30 min or up to overnight
preheat grill to med
thread chicken onto 4 10" skewers
discard marinade
place chicken kebobs on grill, cover &
cook turning occasionally, until
lightly charred & chicken is firm
10-15 min
sprinkle parmesan cheese
