Cheesy Salsa Corn


Oh yum!! I crave this sometimes! Serve with tortilla chips.

  • 1 10 oz. pkg. frozen whole kernel corn
  • 2 T. water
  • 1/3 c. chopped green pepper
  • 2 oz. Velveeta Light
  • 1/4 c. salsa
  • 1/8 t. salt


Preparation time 10mins
Cooking time 10mins


Step 1

Place corn and 2 T. water in a 2 quart dish. Cover with lid. Microwave on high 6 minutes. Stir in bell pepper, microwave on high 30 seconds. Drain well. Add cheese, salsa and salt; stir until cheese melts. serve immediately.
