Twice Baked Potatoes

A new way to serve mashed potatoes. Great with a nice juicy steak.

Ingredients

  • 2 lg Russet Potatoes
  • 4 TBLS Butter
  • 1/2 C Milk
  • 1/4 C Sour Cream
  • Salt & Pepper to Taste
  • 1/4 C Cheddar Cheese

Preparation

Step 1

Preheat oven to 375 degrees. Wash and Scrub Potatoes DO NOT PEEL. Pierce potato in several areas of skin with a fork. Place on center oven rack and back until tender, approx. 45 minutes. Cut potatoes in 1/2 and scoop out potato, leaving a shallow layer of potato to provide stability to skin. Combine potatoes, butter, sour cream, milk, salt and pepper to taste, whip until creamy and restuff into potato skin. Turn the heat up in the oven to 400 degrees, top with cheddar cheese. Return to oven and bake until topping is golden brown, approx. 15 minutes.
