Tofu Salad Sandwich

Ingredients

  • 1/2 Block Extra Firm Tofu
  • 1 Stalk Celery
  • 1/2 Small Red Pepper
  • 2-4 Tablespoons Chopped Red Onion
  • 1/4 Cup Vegan Mayonaise (such as Vegenaise)
  • 1 Tablespoon Dijon Mustard
  • 1 teaspoon Capers (optional)
  • 1/2 teaspoon Turmeric
  • 3/4 teaspoons Black Salt or Sea Salt
  • Several Grinds of Pepper
  • Slices of Bread or Tortilla
  • Your favourite veggies for topping.

Preparation

Step 1

Break the tofu into chunks and put in food processor. Pulse several times so that it is broken into crumbles. You could also do this with a fork or potato masher if you don’t have a food processor.

Chop up the celery, red onion, and red pepper and add to food processor.

Add the vegan mayonnaise, mustard, capers if using, turmeric, salt and pepper to the food processor as well and pulse until all mixed up and delicious.

Spread onto bread or a wrap and add your favourite veggies.
