Chocolate Chip Banana Bran Muffins Recipe

- 1 cup Shredded Bran Cereal (such as Kellogg's All Bran) shopping list
- 1/2 cup 2% low-fat milk shopping list
- 2 tablespoons 2% low-fat milk shopping list
- 1 and 1/2 cups sifted all purpose flour shopping list
- 1/4 cup granulated sugar shopping list
- 1/4 cup miniature semisweet chocolate chip shopping list
- 1 tablespoon baking powder shopping list
- 1/4 teaspoon salt shopping list
- 1 cup mashed ripe banana (Approximately 2 large bananas) shopping list
- 1 large egg shopping list
- 1/4 cup vegetable oil shopping list

Preparation
Step 1
Preheat a rack in the center of the oven and preheat to 400 degrees(F).
in a medium bowl, combine the bran and milk. Let stand 3 to 4 minutes, until soft.
In a large bowl, stir together the flour, sugar, chocolate chips, baking
powder and salt. In another bowl, stir together the banana, egg, oil and softened bran mixture until blended.
Make a well in the center of the dry ingredients. Add the liquid
ingredients and stir with a wooden spoon just to combine.
Spoon the batter into the prepared muffin cups, making each cup 3/4 full. Bake 20-25 minutes or until the muffins are golden brown and a cake tester or toothpick comes out clean.
Cool the muffins in the pan on a wire rack for 5 minutes. Remove the muffins from the cups and finish cooling on the rack.
Serve warm or cool completely. You may store the muffins in an airtight container at room temperature.
