Texas-Heat Potato Packet
- Dry Rub:
- 1 sheet (18x24 inch) non stick foil
- 4 medium potatoes, cut in 1/2 inch cubes
- 2 Tbsp. butter, cut into pieces
- 2 Tsp. garlic powder
- 2 Tsp. paprika
- 2 Tsp. packed brown sugar
- 2 Tsp. salt
- 2 Tsp. black pepper
- 2 Tsp. cayenne pepper
Preparation time 15mins
Cooking time 30mins
Preheat grill to med-high. Center potatoes on sheet of foil (dull) side toward food. Combine dry rub ingredients; sprinkle 2 Tsp. over potatoes. Top with butter.
Bring up foil sides. Double fold top and ends to form one large foil packet, leaving room for heat circulation inside.
Grill 15-18 minutes in covered grill. Stir before serving.
