Green Apple Cheesecake bars

Ingredients

  • 3/4 C. graham cracker crumbs
  • 3/4 C. ginger snap cookies (about 12)
  • 6 T. butter, melted
  • 12 oz. plain cream cheese
  • 1/2 C. sugar
  • 1 box (2.79 oz.)Jolly Rancher green apple gelatin, divided
  • green sanding sugar

Preparation

Step 1

1. Butter an 8 x 8 in. square pan
2. In a mixing bowl, combine graham cracker crumbs, ginger snap crumbs and butter. Press into bottom of buttered pan. Chill 15 min.
3. Place cream cheese in a bow land beat with an electric mixer until smooth; add sugar and 2 T. Jolly Rancher Grn Appl Gelatin and blend just until smooth. Spoon over crust and spread into an even layer; Chill 15 min.
4. Pour remaining gelatin into a bowl. Add 1/2 C. boiling water and stir until dissolved. Add 1/3 C. ice water, mix to combine. Cool 15 min.
5. Pour cooled gelatin mixture over cream cheese layer and refrigerate 2 hours. Sprinkle top with green sanding sugar, slice and serve.
