Sweet Potato Casserole with eggnog

Ingredients

  • 3 cups mashed cooked sweet potatoes (about 2 1/4 #)
  • 1/3 cup packed brown sugar
  • 1/3 cup egg nog
  • 2 Tbsp. melted margarine
  • 1 tea. vanilla
  • 1/2 tea., salt
  • 2 egg whites
  • 1/2 cup packed brown sugar
  • 1/4 cup flour
  • 1 Tbspo. butter or margarine

Preparation

Step 1

Preheat oven to 350 degrees. Coat one 2 qt. baking dish with non-stick spray.

Combine the mashed sweet potatoes, 1/3 cup brown sugar, eggnog, melted margarine, vanilla, salt and egg whites. Spoon mixture into the prepared baking dish.

Combine the 1/2 cup brown sugar and flour. Cut in the chilled 2 Tbsp. butter until the mixture resembles coarse crumbs. Sprinkle over the sweet potato mixture.

Bake at 350 degrees for 30 minutes.
