Ingredients
- 3 lbs. red potatoes
- 1 lb. bacon, thick cut
- 1/4 cup grainy mustard
- 1/3 cup red wine vinegar
- 2 tsp. sugar
- salt & pepper
- 2/3 cup olive oil
- 1 red onion, diced
- 1 cup parsley, chopped

Preparation
Step 1
1. Place potatoes in pot and cover with water and bring to boil. Turn down hear and simmer until tender (about 15 minutes). Drain in cold water.
2. Cook bacon and set aside. Crumble.
3. Whisk together mustard, vinegar, sugar, and salt and pepper. Whisk in oil and set aside.
4. Cut potatoes into 1/4" thick slices and place in a large bowl. Stir in onion and dressing. Let marinate at least 1 hour.
5. Before serving, stir in parsley and bacon, reserving some to sprinkle on top.
