Fast and Easy Fried Rice

Ingredients

  • 3 cups cold cooked white rice
  • 2 Tbsp. peanut oil
  • 2 green onions, chopped, roots and tips removed
  • 2 eggs, beaten
  • 3 Tbsp soy sauce
  • Dash of ginger
  • 1/2 cup of frozen peas and carrots. (optional)

Preparation

Step 1

Add peanut oil to a lg. skillet or wok. Stir the oil around until it covers the bottom of pan. Add all above ingredients except eggs and soy sauce
Begin browning the rice over med. heat, blending the ingredients together.
When the rice is brown, push it to the side of the pan and add the eggs to the empty side of pan.
Using a spatula, fry the eggs, chopping, pushing and turning until well done. Stir the egg pieces into the rice mixture, blending well. Stir in the soy sauce. If using the peas and carrots, add them before the soy sauce.
