Ingredients
- 1 lb. dry baby lima beans
- 1 can stewed tomatoes
- 1 large onion
- 2 lb. soup meat (shank or short ribs)
- 1 large bag mixed vegetables

Preparation
Step 1
1. Rinse beans well.
2 Put beans, onion and meat in large pot and fill 1/2 way with water. Let come to a boil, lower heat to keep a gentle boil and cover. Cook for at least 1 hr.
3. When meat and beans are almost tender, add tomatoes.
4. When beans can be mashed easily with a fork, add warmed vegetable.
5. Season with salt and pepper to taste.
6. When thickened, add ketchup for color.
