Ingredients

  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon butter
  • 1 large shallot, finely chopped
  • 1 1/2 cups rice*
  • 1/2 cup dry white wine
  • A few sprigs fresh thyme, leaves stripped and chopped, about 1 tablespoon
  • 3 cups chicken broth or stock
  • *I like Jasmine rice since it is so flavorful, but any rice works well with this recipe, including brown rice, you just have to adjust the cooking time depending on the type of rice you are using.
