Ingredients
- 6 chicken breast halves
- 3 medium sweet potatoes (about 1-1/4 pounds) unpeeled and cut into 3/4 inch chunks
- 1 small onion, diced
- 1 medium celery stalk, diced
- 1/2 cup apple juice
- 1 tsp salt
- 1/2 tsp Italian seasoning
- 2 9-oz packages frozen cut green beans, thawed
Preparation
Step 1
Preheat oven to 375 degrees.
Cut each breast into four pieces. In a 3-quart casserole, add chicken and next 6 ingredients; toss well.
Cover casserole and bake 40 minutes, stirring occasionally.
Stir in green beans; bake 20 minutes longer or until tender, stirring occasionally.
