Ingredients
- 3 whole jalapeno peppers
- 2 medium avocados, peeled and pitted
- Salt, to taste
- 9 cups low sodium chicken broth
- 2 tablespoons chopped cilantro
Preparation
Step 1
Thinly chop jalapenos, discarding stems, seeds, and veins if less heat is preferred. Smash avocados with a fork until slightly chunky. Combine with jalapenos and salt to taste. In a saucepan, bring broth to a boil over high heat. Scoop the avocado/jalapeno mixture evenly into the bottom of soup bowls. Spoon the hot chicken broth around the mixture. Sprinkle with chopped cilantro before serving.
