Ingredients
- 1 1/2 cups shredded carrot
- 3/4 cup chopped onion
- 2 tablespoons chicken bouillon granules
- 1 tablespoon Italian seasoning
- 9 cups water
- Black pepper, to taste
- 6 ounces packaged cheese tortellini
- 3 cups coarsely chopped fresh spinach
Preparation
Step 1
In a large saucepan with a tight-fitting lid, combine carrot, onion, bouillon granules, Italian seasoning, water and pepper. Bring to a boil then reduce heat, stir in tortellini, cover and simmer for 15 minutes. Stir in spinach and cook for about 15 seconds or just until spinach has wilted.
