One Bowl Macaroons (with a citrus twist!)

Ingredients

  • 1 pkg. (14 oz) coconut (5-1/3 cups)
  • 2/3 cup sugar
  • 6 Tbsp flour
  • 1/4 tsp salt
  • 4 egg whites
  • 2 tsp grated lemon, orange or lime peal (optional)
  • 1 tsp almond extract

Preparation

Step 1

Heat oven to 325. Mix coconut, sugar, flour and salt in large bowl. Stir in egg whites, grated peel and almond extract until well blended. Drop by tablespoonfuls onto lightly greased and floured cookie sheets. Bake 20 minutes or until edges or cookies are golden brown. Immediately remove from cookie sheets. Cool on wire racks.

Passover Macaroons: Substitute 6 Tbsp matzo meal for the flour. (Dust lightly greased cookie sheets with matzoh meal.)
