Ingredients
- 1/3 cup olive oil
- 2 Garlic cloves, minced
- 2 tsp. rosemary (or basil)
- 2 tsp. thyme
- 1/2 tsp. salt
- 1/2 tsp. black ground pepper
- 1 lb. pork tenderloin
- 2 1/2 lbs. potatoes, quartered

Preparation
Step 1
1. Heat over to 375 degrees.
2. Stir oil, garlic, and seasonings.
3. Coat meat with 3 tbsp. of mixture.
4. Place in large roasting pan. Toss potatoes with remaining seasoning mix.
5. Roast 35-40 min. or until juices run clear.
6. Stir potatoes after 20 min.
7. Broil on top rack of oven the last 5-10 min. to brown.
