Herbed Pork Tenderloin with Oven-Roasted Potatoes

Ingredients

  • 1/3 cup olive oil
  • 2 Garlic cloves, minced
  • 2 tsp. rosemary (or basil)
  • 2 tsp. thyme
  • 1/2 tsp. salt
  • 1/2 tsp. black ground pepper
  • 1 lb. pork tenderloin
  • 2 1/2 lbs. potatoes, quartered

Preparation

Step 1

1. Heat over to 375 degrees.

2. Stir oil, garlic, and seasonings.

3. Coat meat with 3 tbsp. of mixture.

4. Place in large roasting pan. Toss potatoes with remaining seasoning mix.

5. Roast 35-40 min. or until juices run clear.

6. Stir potatoes after 20 min.

7. Broil on top rack of oven the last 5-10 min. to brown.
