Mississippi Fudge Cake

Ingredients

  • 4 eggs
  • 3 sticks oleo (butter/margarine) (divided)
  • 2 cups sugar
  • 1 1/2 cups flour
  • 2/3 cup cocoa (divided)
  • 1 dash salt
  • 1 cup chopped pecans
  • 2 teaspoon vanilla (divided)
  • 1 box powdered sugar
  • 6-8 tablespoon milk
  • 1 teaspoon powdered instant coffee (optional

Preparation

Step 1

CAKE

Melt 2 sticks butter and 1/3 cup cocoa together.

In large bowl, beat together eggs, 2 cups sugar, flour and salt. Add butter/cocoa mixture to bowl, add nuts and vanilla.

Bake in greased 13x9 pan about 40 minutes at 350 degrees.

Remove from oven and cover with miniature marshmallows while cake is still hot.

Let cool before adding icing.

ICING

Sift 1/3 cup cococa, coffee and powder sugar. Add 1 stick melted butter, milk and 1 teaspoon vanilla - beat well and spread over cake.
