Ingredients
- 1 tablespoon olive oil
- 1 bunch of scallions, thinly sliced
- 1 celery stalk, chopped
- 3 large garlic cloves, diced
- 1/2 tsp. dried thyme
- 1/8 tsp. crushed red pepper flakes
- salt and pepper
- 1/2 tsp garlic salt
- 3 tablespoons flour
- 1 quart non fat milk
- 1 lb red potatoes, chopped
- 3/4 lb skinless salmon fillet, chopped
- 1 sm. bag frozen corn, thawed
- fresh dill, chopped for serving
Preparation
Step 1
Heat oil in large pot. Add scallions, celery, garlic, thyme, red pepper, garlic salt?, 1/2 tsp. salt and 1/2tsp pepper. Cook and stir until the celery starts to soften. Sprinkle with flour and continue stirring.
Stir in the milk and 1 cup of water. Add the potatoes and simmer until they are tender.
Add the salmon and corn and return to a simmer. Cook until salmon is cooked and serve with dill.
