  • 1 pkg dry yeast
  • 2 1/3 c flour
  • 1/4 tsp baking soda
  • 1 c cottage cheese
  • 2 T sugar
  • 1 T butter
  • 1 tsp salt
  • 1 egg
  • 2 tsp caraway seed
  • 2 tsp grated onion

Step 1

In mixing bowl combine yeast, 1 1/3 c flour and baking soda. Heat together cottage cheese, 1/4 cup water, sugar, butter and salt, until butter melts; add to dry ingredients. Add egg, caraway seed and onion. Beat at low speed for 1/2 minute. Beat 3 minutes at high speed.

Stir in remaining flour. Place in greased bowl, turning once. Cover; let rise until double (1 1/2 hours).

Divide among 12 well greased muffin pans. Cover; let rise about 40 minutes. Bake at 400 degrees for 12-15 minutes.
