Ingredients

    can (15-16 oz) pink salmon

  • 1

    egg

  • 1/3

    cup minced onion

  • 1/4

    cup flour

  • 1/4

    cup cracker crumbs

  • 1

    TBSP cornmeal

  • 1 1/2

    tsp baking powder

  • 2

    TBSP reserved juice

Directions

Drain salmon, reserving 2 TBSP juice. Combine salmon, egg, and onion. Stir in flour and crackers. Add baking powder to juice; stir into salmon. Form small oblong oval balls. Roll in cracker crumbs & cornmeal and fry about 5 minutes in 1 ½ cup shortening. Serve with tartar, cocktail sauce or balsamic vinegar.
