Mom's Candied Sweet Potatoes

  • 6 large sweet potatoes, peeled
  • 2 cups sugar
  • 2 tsp cinnamon
  • 3/4 cup butter, melted
  • 1/2 cup orange juice
  • 1 tsp vanilla

Preparation

Step 1

Cut sweet potatoes into 1/4 inch thick slices
Place sweet potatoes in a lightly buttered 13 x 9 inch baking dish.
Whisk together butter, sugar, orange. Juice, cinnamon and vanilla. Pour over sweet potatoes; cover and let stand at room temperature 1 hour.
Uncover, bake at 350* for 1 1/2 hrs, basting often with juices. If syrup isn't thick at end of baking, carefully transfer sweet potatoes & juice to non-stick pan and cook on stovetop without stirring til syrup is thickened.
