Salmon with Ginger Salsa

Liven up grilled salmon with a tropical fruit salsa. Try serving with garlic-roasted red potatoes, a mixed green salad and bread for a complete meal.

Ingredients
- 2 peaches or mangoes, diced
- 1 large tomato, diced (drain juice)
- 4 green onions, chopped
- 2 tbsp chopped fresh cilantro
- 2 tsp finely minced ginger root
- 1 Tbsp balsamic vinegar
- Juice of o1 lemon
- 4 salmon steaks
Preparation
Step 1
1. I an bowl, mix first six ingredients together to make salsa
2. Heat grill and spray with nonstick cooking spray.
3. Sprinkle lemon juice over salmon. Grill salmon steaks 5 to 6 minutes on each side.
4. Remove salmon from grill and tip each steak with salsa
