Instant Pot Potato Soup

Ingredients

  • 2 Tbs Butter
  • 1 Onion, Diced
  • 2 Cloves Garlic
  • 6 Large Potatoes, peeled and diced
  • 4 C Chicken Broth
  • 1 C plus 2 Tbs Milk
  • 4 TBS Cornstarch
  • 1/2 C Heavy Cream
  • 1 small individual block Velveeta
  • Toppings: Cheese, bacon

Preparation

Step 1

Set IP to Saute and melt butter. Saute ontions until soft (5 min). Add garlic and cook one more minute. Add potatoes and broth … steam for 8 minutes. (It may take 10-15 minutes to reach pressure!) Turn valve to quick release ….

Whisk 2 TBs milk and cornstarch together. Set to Saute, add the rest of the ingredients and bring to a boil. Stir for 5 minutes.

Makes enough for 4 large bowls as a meal.
