Ingredients

  • 15 ounces store-bought, prepared pizza dough, room temperature
  • 1 teaspoon extra-virgin olive oil
  • 1 cup shredded mozzarella cheese
  • 10 ounces frozen spinach, thawed, water squeezed out
  • 1 clove garlic, finely chopped
  • 1/2 cup shredded Parmesan cheese
  • 4 large eggs
  • Salt and freshly ground black pepper

Step 1

Preheat the oven to 500 degrees F. Generously grease a rimmed baking sheet or line with parchment paper.

With floured hands, press the dough into a flat disk on the prepared baking sheet. Starting from the center, push the dough out with floured fingers until it becomes a 12- to 14-inch oval and covers most of the pan.

Spread the olive oil on the surface of the dough, then evenly divide the mozzarella on top. Scatter the spinach, garlic and Parmesan over the mozzarella.

Crack the eggs over the pizza. Carefully transfer the pan to the oven and bake until the eggs are set and the crust is browned, 8-10 minutes. Season with salt and pepper to taste.

Tip: Working with pizza dough is easier when it’s at room temperature. Remove the dough from the refrigerator and let it sit on the counter for at least 30 minutes before using.
