Ingredients

  • 4 eggs
  • 2 c. sugar
  • 1 1/2 c. salad oil
  • 2 c. flour
  • 2 tsp. soda
  • 2 tsp. cinnamon
  • 3 c. finely shredded carrots
  • 1 tsp. vanilla
  • A pinch of salt
  • 1 stick butter
  • 1 (8 oz.) cream cheese
  • 1 c. chopped nuts
  • 1 tsp. vanilla
  • 1 box powdered sugar
  • Coconut, if desired

Preparation

Step 1

Mix together first 3 ingredients.
Sift together flour, soda and cinnamon and add to the above ingredients.
Add carrots, vanilla and salt.

Place batter in 9 x 13 inch pan, greased and floured. Bake at 325 degrees for 40 minutes or until done.

For icing, mix together and spread on - KEEP CAKE REFRIGERATED, because of cream cheese in icing.
