Ingredients

  • 1/4

    lb shrimp

  • 1/4

    lb crab

  • 1

    long english cuccumber thinly sliced ( may substitute lettuce or cabbage)

  • 1/2 to 1

    pkg fine rice noodles

  • Marinade:

  • 1/2

    cup rice vinegar

  • 3

    tablespoons sugar

  • 1/4

    tsp salt

  • 1

    tablespoon sake

  • touch of soya sauce

Directions

Cook noodles and drain. Cool under running water. Mix noodles, cucumber, shrimp and crab in a bowl top with grated ginger. Pour marinae over all ingredients allowing a short time for the flavors to mix. Squeeze a little bit of lemon juice on top. The marinade can vary due to ones taste by adding more or less of the above ingredients. Always taste your marinade before you toss your salad. This dish is best served cold.
