Crumb Coffee Cake
- 1/3 cup firmly packed light brown sugar
- 1 Tbs all-purpose flour
- 1 tsp cinnamon
- 2 scant Tbs soft butter or margarine
- 1/2 cup chopped nuts
- 2 cups sifted all-purpose flour
- 2-1/4 tsps double-acting baking powder
- 3/4 sugar
- 3/4 tsp salt
- 2 eggs, well beaten
- 1/2 cup milk
- 1/2 cup salad oil
Combine brown sugar, flour and cinnamon in a small mixing bowl. With pastry blender, blend butter into mixture thoroughly. Add nuts. Set aside.
Sift together flour, baking powder, sugar and salt into mixing bowl. combine beaten eggs, milk and oil. Stir liquid ingredients into dry ingredients utnil barely blended. Turn batter into greased 9 inch square cake pan. Spoon crumb topping over batter. bake at 400 oven for 25-30 minutes.
