Ingredients
- 4 large eggs (or Egg Substitute)
- 1 c milk
- 1 tsp vanilla
- 1 tbsp sugar
- 1/2 tsp salt
- 8 (1 inch thick) slices of challah or french bread (day old is best)
- FRUIT SALSA
- 2 c strawberries, hulls removed
- 2 med ripe mangos, peeled and pitted
- 1 tbsp sugar 2 tsp lemon juice 1/2 tsp salt (opt.)
- * Depending on the season, all berries, peaches and banana would marinate well as a compote topping.
Preparation
Step 1
WAFFLE FRENCH TOAST
* Preheat a waffle iron and spray generously with a nonstick cooking spray.
* In a bowl, whip together eggs, milk, vanilla, sugar and salt. Pour mixture into a shallow pie pan and drench bread slices.
* Cook slices in the waffle iron one at a time until lightly brown. Serve with fresh fruit salsa.
BERRY MANGO COMPOTE
* Chop strawberries and mangos into small cubes, transfer into bowl. Finely chop mint leaves and add to bowl as well.
* Stir in the sugar, lemon juice and salt. Cover and refrigerate compote for an hour to allow the flavors to marinate. Makes two cups.
