Ingredients

  • 3/4 Cup unsalted butter, room temp
  • 1 Cup Brown sugar
  • 1/2 Cup sugar
  • 1 tsp vanilla extract
  • 2 large eggs, room temp
  • 2 Cups all purpose flour
  • 2/3 Cup unsweetened cocoa powder
  • 1/2 Tsp ground cinnamon
  • 1 Tsp Cayenne pepper
  • 1 Tsp salt
  • 2/3 Cups chocolate chips or roughly chopped 70% chocolate

Step 1

Preheat oven to 350

In a large bowl, whisk together the flour, chocolate powder, cayenne, cinnamon and salt. Set aside.

In a mixing bowl, add the butter and sugars and beat with paddle attachment until very creamy, about 5 minutes. Add one egg and fully incorporate then follow with the remaining egg. Mix in the vanilla extract.

Add the flour mixture next until fully incorporated followed by the chocolate chips. Only mix until thoroughly combined.

With a small ice cream scooper, scoop out small one tablespoon mounds on a parchment paper lined baking tray. Slightly press on the mounds with a spatula. Top with course sugar if desired.

Place in the oven and bake for 10 minutes and the tops are slightly cracked. Remove from oven and allow to sit 5 minutes before moving the cookies to a cooling rack. You can also sprinkle with powdered sugar if desired. Cool completely and keep in an airtight container for 4-5 days.
