Vegetarian - Hannelore's Chili - Sure Slim Diet

Ingredients

  • 1 1/2 cup onion, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 2 cans tomatoes (28 oz)
  • 1 can brown beans (14 oz)
  • 1/4 cup vinegar
  • 1 tbsp. chili powder
  • 1 1/2 tsp. basil
  • 1 1/2 tsp. pepper
  • 2 green peppers, chopped
  • 1 zucchini, sliced
  • 1 tbsp. oil
  • 1 can kidney beans (14 oz)
  • 2 cups mushrooms
  • 1 bay leaf
  • 1 tbsp. parsley
  • 1 1/2 tsp. oregano
  • 3 squirts worcestershire sauce

Preparation

Step 1

Saute onion, green pepper, celery, zucchini and garlic in oil until tender. Add tomatoes and beans including liquid, mushrooms, vinegar and spices.

Simmer 1 hour. Remove bay leaf before serving. Thicken if desired.
