Blueberry Muffins with Streusel Topping

Ingredients

  • 3 cups flour
  • 1 1/2 cups white sugar
  • 1 tsp salt
  • 4 tsp baking powder
  • 2/3 cup vegetable oil
  • 1 tsp vanilla
  • 1 egg
  • 2/3 cup milk
  • 2 cups fresh blueberries
  • Topping: Mix with fork
  • 2/3 cup brown sugar
  • 1/4 cup flour
  • 1/4 tsp cinnamon
  • 2 T butter at room temperature

Preparation

Step 1

400. Lightly grease muffin cups. Combine flour, sugar, salt and powder. Mix together oil, egg, vanilla and milk. Mix this with the flour mixture. Fold in blueberries. Fill cups to the top and sprinkle with crumb topping mixture. Bake 20-25 mins until light golden brown. Cool in pan on wire rack.
