Ingredients
- 1 dozen top neck or cherrystone clams
- 3 strips bacon
- 1/2 cup green pepper, small dice
- 1/2 cup red pepper, small dice
- 1/2 cup scallions or onions minced
- 1 clove garlic
- 1 tablespoon minced parsley
- pinch of cayenne
- 6 ounces softened butter
- 1/2 cup breadcrumbs
- salt to tast

Step 1
Scrub the clams and open.
Render the bacon over medium heat until lightly browned. Add the peppers, onions, scallions and garlic. Saute 1 minute. Remove from pan and cool
Add the parsley, salt and cayenne and the softened butter to the cooled pepper mixture.
Top clams with butter mixture, packing down well and topping with breadcrumbs.
Place in 425 degree oven until hot.
